The pasta is cut
Flour on the long board, and the first sheet goes through the machine.
A fictional kitchen with real opinions about tomatoes.
Philosophy
Short menus, seasonal produce and no theatre. We’d rather spend the time on the pasta than on the plates.

Heritage
Our recipes come from two families who never agreed on how long to cook a ragù. We serve both versions, on different days.
Ingredients
Our flour, oil and vegetables come from a handful of growers and millers. The names here are invented for this demo, so owners can add their own.

One evening, five hours

Flour on the long board, and the first sheet goes through the machine.

The last delivery of the day goes straight onto the boards.

The window table goes first, as it always does.

Small plates cross the table and nobody is looking at their phone.

The candles are low. Somebody asks for one more.

In the kitchen
Elena is a fictional chef for this demo. Owners can add their own photo and story here. She’d tell you that good pasta needs flour, eggs and patience, and that two out of three is not enough.
